Elk jaar beschrijft iemand anders op Château Canon zijn of haar indrukken over het wijnjaar. Het boekje is dit jaar een bijzonder mooie editie met als titel "Métronome". We hadden het geluk ter plekke te kunnen proeven. Het Château verstuurde geen stalen. We bezochten dus de 24 hectare op het plateau argilo-calcaire die toegewijd zijn aan de Grand Vin met grote verwachtingen. Met een nog altijd brede glimlach op het gezicht bevestigen we onze indrukken als volgt: de ervaring start met een zacht zomers parfum. Canon is levendig rijp en expressief. Schitterend rood fruit (aardbei en framboos) intensifieert verder naar griotte of morello kers bij het walsen. De tongval is inderdaad "sapide, suave et savoureux" en oh zo heerlijk. Canon 2019 is een wijn met een kloppend hart. Die intense beleving van essentiële sappigheid bejubelt de volledige proefervaring. Let wel: het blijft de beheerste haute couture snit hooghouden. De cerise et griotte zijn multidimensioneel gelaagd in zachtheid van cashmere, terwijl de Cabernet Franc het geheel floraal parfumeert. Die beheersing in elegantie is opmerkelijk als we weten hoe warm en droog het jaar wel was. Dit is wonderbaarlijk mooi. Los van de bevestigde classificatie als Saint Emilion 1er Grand Cru Classé, smaakt dit naar méér. Die verfijning in buvabilité is verworven sinds de aankomst van Nicolas Audebert en Thomas Duclos. U kan met uw ogen toe kopen, net als in 2015, 2016, 2017 en 2018, de boekdelen van dit recente succesverhaal. De 2019 werd 74% Merlot en 26% Cabernet Franc, geplukt tussen 11 september en 4 oktober. 14,5%vol. pH 3,5. Zij die proefden scoorden zomaar eventjes 98, 99-100, 96-97 en 99. Terecht: Canon is on top of its game. IN DE PERS 97 Neal Martin – vinous.com (Februari 2022) The 2019 Canon has a fine, detailed nose of blackberry, raspberry, scorched earth and just a touch of crushed stone. The palate is medium-bodied with fine delineation, poised and focused, yet serious. This is a Canon with breeding, but it is more of a long-term prospect compared to the 2018. A second sample at the château showed a bit more depth on the saline finish, and based on that example, I think this will become an outstanding Saint-Émilion. A wine of immense charm and sensuality, the 2019 is immediately appealing today, but also clearly has the potential to age for many decades. The 2019 is not as exuberant as most recent vintages, and yet its balance is simply magnificent. Readers can expect an aristocratic Saint-Émilion that is holding so much in reserve. Patience is key. Tasted three times. Drink 2031-2059. 97 William Kelley – robertparker.com (April 2022) The 2019 Canon has turned out brilliantly in bottle, wafting from the glass with complex aromas of raspberries and red plums mingled with notions of raw cocoa, dark chocolate, pencil shavings and rose petals. Medium to full-bodied, seamless and multidimensional, it's one of the most refined, elegant right bank wines of the vintage, with a deep core of fruit, beautifully refined tannins, lively acids and a long, perfumed finish. This is a superb achievement for Nicolas Audebert and his team. Drink 2029-2065. In the last few years, this sleeping giant has well and truly reawakened, and the 2019 seems to me the finest Canon that Nicolas Audebert and his team have yet produced. Extensive replanting between 1996 and 2003, overseen by Audebert's predecessor, John Kolasa, saw some 50% of the estate's 22 hectares replaced. The fact that these vines are now arriving at full maturity surely goes some way to accounting for Canon's contemporary renaissance. Now, the team is working on restructuring the rest, combining massal selections and clones. Viticulture is thoughtful, with cover crops across the estate, and the terroir itself is relatively homogeneous: solid limestone covered by some 0.25-0.7 meters of clay, with a more or less uniform exposition on Saint-Émilion's plateau. There's also one small parcel in the town itself and another by Berliquet. Today, the vineyard is planted with about 70% Merlot and 30% Cabernet Franc, and there are no plans to radically alter that. Winemaking privileges finesse over power, though a certain richness and texture can be taken for granted with a site like this, and maturation is in 50% new oak (mostly from Taransaud, Emptos, Sylvain and Quintessence). 100 Jane Anson – janeanson.com (Februari 2022) Château Canon has been taking off over the past few years, and here you see why. Just so much complexity, depth, power, interest in the whole thing. This buzzes with life, rises above the palate, full of gunsmoke, truffle, raspberry, blueberry, so delicious. Needs time but already showing it will be worth the wait. 45hl/h, 3.5ph, Harvest September 11 to October 4, 50% new oak. Thomas Duclos consults. 98 Jane Anson – decanter.com (Juni 2020) Sleek, elegant and appealing even before you get your nose near the glass. Aromatically it is deep and rich, and then it revs up and takes off. Dense, compact and intense, zingy limestone vibrancy and grip. Winemakers say they are looking for balance all the time, but here you feel it, with tiny pulses of electricity that appear from beginning to end of the palate. Salinity on the finish with gunsmoke and extremely moreish blueberry and blackberry fruit, with a creamy texture as things open up. 50% new oak. Thomas Duclos consults. Drinking Window: 2028 – 2050. 98 Lisa Perrotti-Brown - thewineindependent.com (Mei 2022) The 2019 Canon is a blend of 74% Merlot and 26% Cabernet Franc. Deep garnet-purple, it offers subtle suggestions of redcurrants, Morello cherries, and fresh blackberries to begin, giving way to nuances of candied violets, star anise, wild sage, and cast-iron pan with a touch of wood smoke. Full-bodied, the palate delivers dense layers of black, blue, and red berries intertwined with earth and mineral accents, framed by firm yet velvety tannins and amazing tension, finishing with fantastic persistence. 98 Jeb Dunnuck – jebdunnuck.com (April 2022) The 2019 Château Canon is another brilliant wine from this talented team that delivers everything you could want from this incredible terroir located on the upper limestone plateau. Based on 74% Merlot and 26% Cabernet Franc, it has a pure, incredibly refined, yet still powerful profile that takes time to unwind. Offering up beautiful notes of black raspberries, wild strawberries, spring flowers, chalky minerality, and graphite, it hits the palate with medium to full-bodied richness, a layered, multi-dimensional mouthfeel, ultra-fine tannins, and a finish that's something to behold. This isn't the massive style of the 2015 and reminds me slightly of the 2016. It's perfectly balanced and, again, the purity and finesse are off the charts. It needs to be forgotten for 4-5 years and enjoyed over the following 2-3 decades. Hats off to Nicolas Audebert for another sensational wine. 17,5+/20 James Lawther MW – jancisrobinson.com (Juni 2020) 74% Merlot, 26% Cabernet Franc. Barrel sample. Refined, perfumed nose. Vibrant, juicy fruit with fine texture and tannins. Palate-cleansing finish. Total harmony. Another strong effort from this estate. Drink 2027 – 2045 97 James Suckling – jamessuckling.com (Februari 2022) Blackberries, blueberries and dark chocolate with bark, mushrooms and chalk. Lavender, too. Full-bodied with firm tannins that are polished and velvety. White pepper, gesso and crushed stone. It’s full-bodied and layered with tightness and focus and a long finish. It’s solid and stalwart, as usual. Reminds me of the very special 1955. One for the cellar. Mûr et expressif, débordant de vie, le vin plonge dans le verre où virevoltent des notes éclatantes de fruits rouges, de fraises et de framboises plantureuses. Quelques agitations de plus et le fruit s’intensifie encore, laissant déborder des arômes de cerise griotte, et toujours cette sensation sapide, suave et savoureuse. Le vin palpite. Intense, séveux, il conserve tout au long de la dégustation sa dimension juteuse qui signe la caractéristique du millésime. Elle nous parle de maîtrise dans une année pourtant chaude et sèche. Elle apporte le roulant de la bouche et anime sa matière. Un Canon généreux mais juste, qui conjugue consistance avec fluidité. CanonCanon is een Saint Emilion Premier Grand Cru Classé die zijn sporen verdiende in een ver verleden. De aankomst in 1996 van de broers Wertheimer werd een kantelmoment. De eigenaars van Chanel pasten Haute Couture toe: vandaag is een typische Canon extreem elegant, fijn en complex. De wijngaard werd gaandeweg uitgebreid van 20,5 tot 34 hectare (31 in productie), na de aankoop van Curé Bon la Madeleine (plateau, argilo-calcaire) en Matras (de zuid-zuidwestelijke helling en pied de côte ten Zuiden). John Kolasa en nu Nicolas Audebert zetten orde op zaken. Twintig jaar “volstond” om Canon er weer helemaal te doen “staan”. Canon is vandaag the talk of town (in Bordeaux en tot ver daarbuiten) zeker sinds de legendarische 2015, 2016 en 2018. Er werd 70% Merlot en 30% Cabernet Franc aangeplant op een densiteit tussen 6.500 en 7.200 wijnstokken per hectare. De gemiddelde leeftijd van de wijngaard was 30 jaar in 2018. De bodem bestaat uit kalk onder een dunne laag klei op het plateau en zandering klei op de helling. AudebertNicolas Audebert is een wijnmaker van formaat en een tovenaar. Hij bouwde zijn carrière uit bij Champagne Krug en Cheval des Andes in Argentinië voordat de gebroeders Wertheimer hem aanstelden als opvolger van John Kolasa sinds 2015 op Château Canon, de Saint Emilion Premier Grand Cru Classé, en Château Rauzan Ségla, Deuxième Grand Cru Classé Margaux.
