Ausone wordt binnen een drietal jaar bio en gaat zo de uitdaging van klimaatverandering aan. Pauline Vauthier en haar team maakten een schitterende Ausone, die in een wijnjaar als 2020 elk potentieel verwezenlijkt die dit grandioos terroir biedt. Ja, dit is dus opnieuw "un grand Ausone", met speelse eiktoetsen, majestueuze sensoriële proefervaring in suavité en voorzien van een minutenlange finale “sur un fond de fraîcheur”. Volmaakte en succulente Ausone. Bravo! Enkel zij die het Château bezochten konden proeven. We zijn dankbaar dat we dit mochten aanschouwen. 50% Cabernet Franc, 50% Merlot. IN DE PERS 97-99 Neal Martin – vinous.com (Juni 2021) The 2020 Ausone was picked at 37hl/ha (a little bit less than 2019 according to Pauline Vauthier) on 14 and 19 September for the Merlot, 23 and 29 September for the Cabernet Franc, matured in entirely new barriques with a light toasting. This 2020 has a tightly wound nose at first, needing more encouragement than other recent vintages. It then, almost reluctantly, reveals intense black cherry, blueberry and violet aromas. Maybe this is not as hedonistic as other years? The palate is medium-bodied with succulent, ripe tannins and a fine bead of acidity. Now the more opulent Ausone comes through, albeit succinctly controlled, with lightly spiced red fruit and a finely proportioned and quite persistent finish. Sophisticated and classy, this rather brilliant Ausone will mature with grace and style. Drink 2030-2065. 98-100 Jane Anson – decanter.com (Mei 2021) This is powerful and blows away much of the competition with its depth and layers. This needs you to pull up a chair, take a beat, and let the flavours unroll. There is so much density to the blueberry, bilberry and smoked raspberry fruits that they start out knitted down, then as the oxygen opens them up the body of the wine widens and becomes fleshier and creamier, adding chocolate and mocha notes. The limestone scrape is there in spades through the finish, and this is a cleverly constructed wine. As ever Ausone is just a masterclass in how to take apart and then put back together a terroir. Great stuff. First year of official conversion to organic farming. 100% new oak, some in 30hl oak casks. Could go up after tasting in bottle, a potential 100 points. Drinking Window 2028 – 2048. 95+ William Kelley - robertparker.com (April 2023) A blend of equal parts Cabernet Franc and Merlot, the 2020 Ausone wafts from the glass with aromas of dark berries and cherries mingled with notions of incense, spices and raw cocoa framed by a creamy patina of new oak. Medium to full-bodied, layered and seamless, it's pure and concentrated, with a sweet core of fruit, generously extracted tannins and a vanillin-inflected finish. Less seamless and sensual than the lovely 2019, it will require some patience to come together, but there is no mistaking the quality of the terroir here. Drink 2030-2070. One of Bordeaux's greatest terroirs, perched on the edge of Saint-Émilion's limestone escarpment, Ausone comprises vineyards on the slopes (of which one, "Le Poirier," situated directly below the château, supplies the core of the assemblage) and on the walled terraces that cling to the top of the plateau. It's a sheltered mesoclimate, planted predominantly with Cabernet Franc, with at most 1.2 meters of clay above the rock. The vineyards are old, and when missing vines have been replaced, the replacements are tagged and harvested separately. In the winery, the fruit ferments in wooden vats with twice-daily délestages (rack-and-return) until alcoholic fermentation begins to subside, at which point the cap is simply moistened until the moment of décuvage and pressing. Maturation follows, in a cool former quarry hewn from the limestone, in entirely new barrels (mainly from Taransaud and Demptos) and lasts for some 20 months. The results are invariably compelling, but the 2020 is rather more overtly defined by extraction and élevage than its 2019 counterpart. The terroir always emerges with time, however. 18+/20 James Lawther MW – jancisrobinson.com (Mei 2021) 50% Cabernet Franc, 50% Merlot. Cask sample. Deep and intense with mineral, dark fruit and chocolate notes. Initially broad across the palate then firm, long, fresh and structured. Plentiful tannins but very fine and enrobed in generous fruit. Powerful but elegant with loads packed into the wine. Striking potential. 97-98 Michael Schuster – theworldoffinewine.com (Mei 2021) (50% M, 50% CF; 66% harvest; 26hl/ha; 14.5% ABV; 100% new). Dense and with a beautifully defined pure, floral, and subtly black-cherry-sweet nose; rich, full, fresh, and very finely tannic within its restrained profile; there is nothing pronounced here, just a beautiful core of mineral-infused, black-cherry fruit, very limestone-marked, long, delicate, graceful, and transparent, always mouthcoatingly fragrant, and with great persistence. Absolutely benchmark, top-notch, limestone-plateau St-Emilion, with its characteristic combination of delicacy and power, more reminiscent of the best red Burgundies. A wine of exceptional subtlety and scope allied to a beautiful fruit presence. Probably accessible relatively early but, of course, with years of perfumed pleasure down the decades. Drink 2035–60+. AusoneAusone is spectaculair in elke zin van het woord en behoort tot de absolute elite in Bordeauxwijnen. Het dankt deze positie aan zijn ligging, zijn zeldzaamheid en zijn prijs. De kleine wijngaard ligt op steile, zuidwestelijke hellingen net buiten de muren van Saint Emilion. Na een geschiedenis van onregelmatige kwaliteit, kwam de omwenteling midden de jaren 1990 toen de familie Vauthier alleen eigenaar werd: kwaliteit en prijs stegen exponentieel. Het terroir maakt het verschil. De hellingen van 15 à 20% vereisen manueel labeur en de ondergrond van klei en kalk is vrij ondiep. Ook in zijn assemblage onderscheidt Ausone zich: 65% Cabernet Franc en een minderheid Merlot. De oudste wijnstokken, net naast de Chapelle op de zuidoostelijk georiënteerde helling, overleefden de grote vorst in de nacht van 19 op 20 februari 1956 en zijn ondertussen meer dan een eeuw oud. Enkele rijen Cabernet Sauvignon, aangeplant in 2006, worden gebruikt voor de tweede wijn, Chapelle d’Ausone. Aangezien goede klonen moeilijk te vinden zijn, organiseert Ausone de heraanplanting via sélection massale in samenwerking met Châteaux Corbin in Saint Emilion en Lafleur in Pomerol. Dit herplantingsprogramma is een traag verhaal dat 100 jaar in beslag zal nemen. Weet dat een braakliggend stuk pas na 2 jaar kan worden herplant. Maar ook de “restauratie” van de gebouwen is al jaren aan de gang. Sinds 2010 gebeurt alle werk in de kelders via zwaartekracht en met kleine inox tanks van 20 hl, die de houten fermentatievaten van 45 hl vervangen. Ook de proportie nieuwe eik verminderde van 100 tot 80%. Ausone had slechts drie eigenaars over de laatste 5 eeuwen, maar kende toch een bewogen geschiedenis, zoals een jarenlange familieruzie. In april 1997 bood miljardair François Pinault uiteindelijk 60 miljoen Franse Frank (of 17 miljoen Franse Frank per hectare) aan de oudere groottante van Alain Vauthier, Madame Heylette Dubois-Challon, voor de helft van de aandelen. Op de valreep kon Monsieur Vauthier zelf het geld vinden om haar uit te betalen; vandaag controleert hij het Château en volgt zijn dochter Pauline hem op. Pauline startte aan zijn zijde toen ze 21 werd. "Mon père donne des conseils, mais c’est moi qui décide". Ze is op weg naar biodynamie, hanteert "soutirage en lune montante" en bottelt "en lune descendante". "Des méthodes douces intègrent la création des vins complétées de gestes posés et retenus afin de donner au terroir l’expression la plus authentique possible." De naam Ausone wordt dikwijls gecopiëerd en vele rechtszaken zijn hangende. In 2013 wonnen ze zelfs een procedure in China tegen de deponering van een Chinese vertaling van de naam Ausone. De naam Ausone was als dudanig nochtans niet gedeponeerd. Met zo’n reputatie en een kleine opbrengst (normaal een zevental vaten per jaar) is Ausone de meest prijzige Saint Emilion. Ausone behoort elke jaar steevast tot de grootste wijnen di er zijn. Legendarisch... VauthierAlle krediet voor de heropstanding van het grandioze terroir van Ausone komt toe aan Alain Vauthier. Er zijn geen externe consulenten op Ausone: de assemblages worden gedaan door Pauline Vauthier en Phillippe Baillarguet, de keldermeester sinds 1996. De familie Vauthier bezit 80 hectare in Saint Emilion. Naast Ausone zitten ook de Fonbel, Haut Simard, Simard, Moulin Saint Georges en La Clotte in hun portefeuille. |
