Volnay est le fief du domaine familial. Niché à flanc de coteau, le vignoble de Volnay a longtemps conquis le cœur des ducs de Bourgogne qui en possédaient une bonne partie. Le lieu-dit réputé Les Taillepieds tirerait son nom de sa forte pente et surtout de petits cailloutis tranchants sur laquelle les vignerons « se tailladaient les pieds » en bêchant la terre. Il est situé au levant / sud, en milieu de coteau fait d'argile brune claire et d'un petit cailloutis en abondance. Le Volnay Les Taillepieds a peu à envier aux grands vins de la côte de Nuits : c'est un modèle de pureté aromatique, de précision et de rigueur dans la construction. La définition du nez est précise, pure, souvent florale, toujours minérale et épicée. La bouche est charpentée avec une trame tannique très serrée, dense, minérale. Tous ces éléments, le minéral, la pureté, la rigueur et l'élégance évoquent un édifice cistercien qui, comme les abbayes, semble défier le temps. En effet, un Taillepieds peut vieillir et rayonner des décennies. Les Taillepieds is één van de iconische cuvées van Domaine de Montille. De wijnstokken zijn meer dan 80 jaar oud. De 2022 werd 100% van het fruit gevinifieerd als hele trossen of “vendange entière”. Dit is een magische wijn met een charmante, florale en pittige neus. De neus is een genot, met prachtig zuiver roodbessenfruit vermengd met florale toetsen. De zuurgraad bouwt zich op vanaf het middengehemelte tot een bevredigende, zilte, minerale afdronk. Delicieuze tannines komen, netjes gelaagd, bovenop het rode fruit. Drink 2030–2050. The core of ripe fruit plus the additional perfume from whole bunches. A very fine graceful texture with tensile strength. Drink 2032-2038. 91-93 Neal Martin – vinous.com (Januari 2024) The 2022 Volnay Les Taillepieds 1er Cru has the ripest bouquet of the Volnay cuvées - red cherries and wild strawberries, the 100% whole bunches, very well enmeshed. The palate is medium-bodied with finely chiselled tannins. A nimble Volnay that is light on its feet with a precise finish. Very fine. Drink 2026 – 2045. Head winemaker Brian Sieve describes: “We had an uneventful 2022,” he explains in their barrel cellar in Meursault. “We didn’t have any employee or tractor problems. The “noise” you have during a vintage didn’t happen. The biggest problem was finding good wood to prune after the frosts in 2021, which was early in the season. We had quite a bit of rain in June to sustain us through the dry periods, especially on the limestone soils. The Côte de Nuits, particularly Clos de Vougeot, seem to get more rain than the Côte de Beaune, 40mm there compared to 10mm down here. I believe the anti-hail canons in the Côte de Beaune ‘push’ the storms northwards. Marsannay and Gevrey get heaps of rain. You get more stress on more calcareous soils that are porous but free-draining. We had no heatwave or ‘canicule’ when the vines shut down. It was a warm season, but the stats are skewed because of the hot temperatures in February and March. It wasn’t like 2018 when maturity was advanced and progressing very fast. In 2022, the maturity came slower. We started with the kosher wines on August 26 and finished around September 8. We cropped at around 45hL/ha for the reds. The whole cluster percentages were based on whether it fitted into the vats. The wines underwent one extraction per day, pigeage rather than pumping over, which is just done at the beginning, whereas in his day, Hubert de Montille was doing three or four. Extraction happens by itself more than it used to. We found that we had very high-quality lees in 2022. Domaine de MontilleSinds 1730 kenden 9 generaties de Montille een bewogen geschiedenis. De twee jongste generaties breidden het Domaine weer uit tot 37 hectare (20 rood en 17 wit). De eigenzinnige bewaarwijnen van vader Hubert de Montille werden altijd al gesmaakt. Tegelijk bottelde deze advocaat, overleden in 2014, au Domaine zoals DRC, Roumier of Rousseau en hielp hij de grenzen van Grand Cru en Premier Cru uittekenen. Zoon Etienne innoveerde als eerste met biodynamie. Geïnspireerd door Alix en Jean-Marc Roulot, zijn zus en schoonbroer, bezorgde hij zijn witte wijnen fijnere zuren, lengte en precisie. De rode wijnen werden vlijtiger met meer vinificatie en grappe entière en minder koude pre-fermentatie en pigeage. Na vinificatie op vat verlengden ook de élevages.
